The Quest Ended

When living abroad the littlest pleasures are what you hold onto. Today that pleasure was finding a muffin recipe that actually produces good muffins in the "Barbie oven" (our super crummy toaster oven). Usually I put in my itty bitty six-heart-muffin tin loaded with batter and pray for success. To date they always come our SUPER dense, spongy, and somewhat disgusting. We always consume the sad little excuses for "muffins" ravenously because they bear some semblance to a baked good. Today I was trying to figure out what to do with the sour cream in our fridge. The sour cream they sell in the foreign supermarket is very rich (it is Australian sour CREAM) and very expensive. We splurge and get it when we decide to make burritos (usually whenever we have failed to get ourselves invited to dinner on a Sunday). Since I don't eat sour cream out of the tub (darn lactose intolerance) Anson and Paul are really the only ones who eat it. So, we had 1/2 a cup sitting in our fridge threatening to go bad. THUS, the wonderful discovery of the phenomenal muffin recipe. The muffins are both delicious and fluffy. And if a recipe can hold up against the "Barbie oven" it is foolproof (unless you are blogging while cooking the last two and therefore burn them). If you don't have or like chocolate chips, raisins or other dried fruit bits may work as well...I am going to see next time we have sour cream (the cost of chocolate chips here is ludicrous). Loves!
